FUN FACT: These three mushroom varieties are technically the same! Yep, the small button mushrooms are just harvested earlier, while the larger flat mushrooms are left to grow for longer. How cool!

Button Mushrooms

Button mushrooms have the mildest flavour, slightly intensifying once cooked. Being the youngest mushroom means they are very firm and hold their shape when cooked.

Cup Mushrooms

Cup mushrooms are Australia’s most popular! Their mild and delicate flavour makes them versatile and perfect for almost any recipe. Cups will also hold their shape when cooked.

Flat Mushrooms

The flat mushroom is more mature, meaning the flavours are enhanced. They have a rich and bold flavour and are much softer in texture.

Enoki Mushrooms

Enoki mushrooms have a very mild and delicate flavour. As this mushroom is relatively thin, care should be taken when cooking and be sure not to overcook them.

Wood Ear Mushrooms

There’s not much flavour to the wood ear mushroom, but they have a mild and musty taste that picks up the spices of the dishes it’s put in.

King Oyster Mushrooms

The King Oyster mushroom’s flavour is mild when raw, but it enhances once they’re cooked. They are often described as ‘vegan’s seafood’ due to their seafood-like flavour and texture.

Shiitake Mushrooms
